Ingredients
1 and 1/4 cup of brown sugar
1/3 cup canola oil
1 cup buttermilk (substitute 1 cup milk + 1 tbsp vinegar)
1 egg
1.5 tsp vanilla
1 tsp baking soda
Pinch of salt
2.5 cups flour
1 grated zucchini
For sugar coating:
3/4 cup brown sugar
3 tsp melted butter
1 tsp cinnamon
Instructions
Preheat oven to 350.
Combine all ingredients in a bowl in the order listed. Pour in half of the mixture into a square baking tray.
In a small bowl combine sugar, cinnamon and melted butter. Pour half of sugar layer on top. Pour remaining cake mixture on top, and put remaining sugar coating on top.
Bake for 30 mins. Cut into squares and enjoy!
