These muffins are super easy to make, and with just one bowl there's no mess. Chia seeds are high in fiber and protein, and are easily incorporated into this recipe. These muffins are chewy and soft on the inside and are perfectly balanced with the sweetness from the chocolate.

Recipe- Makes 12 muffins
Ingredients
1 egg
2.5 tbsp olive oil
1 tsp vanilla extract
1 cup milk of choice
2 tbsp chia seeds
3/4 cup flour
1 and 3/4 cups oats
1/4 cup white sugar
2 tsp baking powder
1/2 cup semi sweet chocolate chips
Instructions
Preheat oven to 400.
In a bowl, combine egg, olive oil, vanilla, milk and chia seeds. Add in flour, oats, sugar and baking powder until well combined. Fold in chocolate chips.
Scoop approx 2 tbsp of mixture into lined muffin tray. Bake for 25 mins. Enjoy!
