ZUCCHINI CARROT MUFFINS

These veggie filled muffins will make you feel warm and cozy with the touch of cinnamon. It’s a great way to sneak in a ton of veggies and makes for the perfect post workout snack!

Ingredients

2 eggs

1 and 1/3 cup sugar

1 tsp vanilla extract

2 tbsp vanilla yogurt

1.5 cups shredded zucchini

1.5 cups shredded carrots

3/4 cup melted unsalted butter

1.5 cups flour

1 tsp baking soda

1 tsp baking powder

2 tsp cinnamon

Pinch of salt

1/2 cup sliced cashews

1/2 cup raisins


Instructions

Preheat the oven to 350. In a bowl combine all the wet ingredients. In a separate bowl combine the dry ingredient and mix into the zucchini mixture. Fold in cashews and raisins .

Scoop mixture into a lined muffin tray and bake for 20 mins. Enjoy!
