ZOODLES w/ AVOCADO SAUCE+ SHRIMP

These zucchini noodles are so easy to make and are a great healthy alternative to pasta. With oven baking shrimp, there’s so mess and it’s a great compliment to the creamy avocado sauce.

Ingredients

2 zucchinis

1 bag of shrimp

2 ripe avocados

1/3 cup cream cheese

1 lime

2 tbsp olive oil

2 tbsp paprika


Instructions

Preheat oven to 375.

In a bowl combine shrimp, 1 tbsp olive oil, paprika and salt. Allow to marinate for 30 mins.

Place shrimp on a baking sheet and bake at 375 for 25 mins.

In a food processor, combine avocado, olive oil, lime juice, cream cheese, salt and pepper. Once mixture is creamy, pour into a saucepan under low heat.

Add in spiralized zucchini and cook under low heat for 5 mins.

Mix in shrimp and enjoy!
