These vegan brownies turned out to be so fudgy and delicious. You cannot taste the zucchini at all, and it's a great way to sneak in your veggies. I used organic date sugar from Liva Foods, which made this even better!

Ingredients
1 zucchini, grated
1/2 cup nut butter
1 cup milk of choosing
1 tsp vanilla extract
3/4 cup flour
1/2 cup cocoa powder
3/4 Liva Organic Date Sugar (or other refined sugar)
1 tsp salt
1 and 1/2 tsp baking powder
1/4 vegan chocolate chips (optional)
Instructions
Preheat oven to 350.
In a food processor, combine the grated zucchini, nut butter, milk and vanilla. Blend until a smooth consistency is formed. Add in flour, cocoa powder, sugar, salt and baking powder. Fold in chocolate chips.
Pour mixture into a square baking tray and bake for 25 mins.
