VEGAN PB CHOCOLATE POKE CAKE

This one bowl vegan cake turned out to be so moist and fluffy. Poke cake is great because there’s a melted chocolate surprise when you slice into the cake! With all whole ingredients and no added sugar, it’s a healthy and wholesome treat!

Ingredients

1 and 1/4 cup flour

1/3 cup ground peanuts

2.5 tsp baking powder

1 tsp salt

1/2 cup maple syrup

1/2 cup creamy peanut butter

1 cup cashew milk

1/4 cup vegan chocolate chips

Frosting:

5 tbsp peanut butter

3 tbsp maple syrup

3.5 tbsp cocoa powder

3 tbsp water


Instructions

Preheat oven to 350.

In a bowl combine the flour,baking powder,salt,and ground peanuts. Add in maple syrup, peanut butter and cashew milk. Fold in chocolate chips and pour mixture into a square baking tray and bake for 25 mins.

In a bowl for the frosting combine the maple syrup, cocoa powder, peanut butter and water.

Once the cake is baked, poke holes in the cake with the end of a wooden spoon. Fill the holes halfway through with chocolate chips. Let cake cool completely.

Spread frosting on top and refrigerate for 30 mins. Slice and enjoy!
