Vegan Chia Oat Cookies

These cookies turned out so delicious! You only need one bowl, and about 30 minutes! With only a few simple ingredients, these cookies will hit the spot! The chia seeds add an amazing texture, and the combination of peanut butter and oats never gets old!

Recipe, Makes 6 Cookies

Ingredients

2 tbsp chia seeds

1/2 cup milk of choosing

1/3 cup smooth peanut butter

3/4 cup rolled oats

1/4 cup shredded coconut

1/4 cup vegan chocolate chips

Optional: Live Natural Now Monk Fruit Sweetener ( 1 tbsp)


Instructions

Preheat oven to 350.

In a bowl add in chia seeds, and 1/4 cup of milk. Mix and let rest for 10 mins till thick consistency is formed.

Add in peanut butter, and remaining milk. Mix well.

Add in rolled oats, shredded coconut, chocolate chips, and monk fruit liquid sweetener (optional).

Form balls and flatten onto a baking tray.

Bake for 20 mins. Let cool completely. Enjoy!
