These easy stuffing muffins gives a fun twist to regular Thanksgiving stuffing! They look great and could work an appetizer or as a side to dip in some soup!

Ingredients
4 cups of bread of choice, ripped apart
2 tbsp butter
1 tsp salt
1 small white onion
2 cloves garlic
1 tsp dried oregano
1 egg
1/2 cup vegetable broth
Instructions
Preheat oven to 350. Bake ripped bread for 15 mins.
In a pan under medium heat, melt butter and add in chopped onion, crushed garlic, salt and other vegetables of choosing.
Remove pan from heat and add in bread, oregano, broth and beat egg. Fold together until well combined.
Scoop approx. 2 tbsp of mixture into muffin tray spots.
Bake for 25 mins at 350. Enjoy!
