Ingredients
1 cup quinoa
2 carrots
1/2 broccoli
1/2 cup cauliflower
1/4 cup soybeans
1/4 cup black beans
1 cup of shredded habanero cheese
2 tbsp butter
2 tbsp flour
1 and 1/2 cups milk
Instructions
Cook quinoa according to package.
In a pan with some olive oil lightly fry the veggies until cooked. Season with salt and pepper.
In a separate pan, melt the butter and add in the flour. Whisk together and gradually add in milk until mixture is thick.
Fold in cooked quinoa, veggies and 1/2 cup of cheese to mixture.
Pour onto a baking tray, and sprinkle remaining cheese on top.
Bake at 350 for 30 mins.
