Healthy Pumpkin Waffles

These waffles are perfect for a cozy fall morning. With oat flour, cinnamon and pumpkin puree, these waffles will have you feeling full and warm! This recipe could also be used to make pumpkin pancakes!

Recipe Makes 8 Mini Waffles

Ingredients

1 and 1/4 cup oats

1/4 cup flour

1/2 tsp baking powder

1 tsp cinnamon

2 eggs

3 tbsp pumpkin puree

1/2 tsp vanilla

2 tbsp milk of choice

2 tbsp maple syrup

1/4 cup melted coconut oil


Instructions

In a blender, add in oats and blend until flour like consistency is formed. Add in flour, baking powder and cinnamon and mix until well combined.

In a separate bowl, add in eggs, pumpkin, vanilla, milk, maple syrup, and coconut oil. Mix well.

Add in flour mixture and fold until well combined.

With a non stick mini waffle press, scoop 1/3 cup of mixture and cook.

Top off waffles with maple syrup, nut and fruit!
