FLOURLESS VEGAN ZUCCHINI BROWNIES

These brownies turned out so fudgy and decadent, they’re probably my new favourite brownie! You cannot taste the zucchini at all and definitely cannot stop at just one!

Ingredients

1.5 cups of rolled oats

1/2 cup cocoa powder

3/4 cup white sugar

1 tsp instant coffee (hazelnut)

1 tsp baking powder

1/2 tsp baking soda

1/3 tsp salt

1 zucchini grated

1/2 cup nut butter

1/3 cup cashew milk

1 tsp vanilla extract


Instructions

Preheat the oven to 360.

In a food processor, blend oats until it has a flour like texture. Add in the remaining dry ingredients and blend.

Add in grated zucchini, nut butter, milk, and vanilla. Blend until mixture is smooth.

In a square baking tray lined with parchment paper, pour in mixture and bake for 20 mins.

Allow to cool completely and enjoy!
