There's no mess when making these, and they're packed with fiber and protein from the flax and nuts!

3/4 cup rolled oats
1/4 cup mixed nuts
3 tbsp ground flax
3/4 tbsp cinnamon
1/4 tsp salt
2 tbsp brown sugar
1/2 tsp baking powder
2 tbsp maple syrup
1 tsp vanilla extract
1 egg
1/4 cup butterscotch chips
Instructions
Preheat oven to 350.
In a blender, blend the rolled oats and nuts till a coarse texture is formed. Pour oat/nut mixture into a bowl and add in flax, cinnamon, salt, sugar, and baking powder. Mix in maple syrup, vanilla and egg. Fold in butterscotch chips.
Scoop 1 tbsp of mixture and press into lined muffin cups. Bake for 15-20 mins, enjoy!
