Baked oatmeal is a great breakfast to prep ahead of time. It’s sweet, fruity and has that great oat texture! It can also be reheated in the microwave with a splash of milk.

Recipe
Ingredients
1 and 1/2 cup cashew milk
1 tbsp ground flax seed
1/2 peanut butter
1 tbsp maple syrup
1 tbsp honey (optional)
2 ripe bananas
1 tsp vanilla extract
1 tsp salt
1 tsp baking powder
2 and 1/2 cups of @quaker old fashioned oats
1 cup blueberries
Instructions
In a large bowl, mash 2 ripe bananas till there aren’t many lumps. Add in milk, maple syrup, honey,flax seed, peanut butter and vanilla extract. Mix well.
In a deep dish baking tray, combine oats, baking powder and salt. Add in liquid mixture and blueberries.
Mix well and evenly spread across baking tray.
Bake at 375 for 30 mins.
Allow to cool, drizzle some peanut butter on top and enjoy!
