4-Ingredient SPINACH CHEESE POCKETS

These little pockets were so easy to make and there’s no need to prep dough for this! Spinach and Monterey Jack cheese is an amazing savoury combo! With oven baking, it’s healthy with no grease. If you have extra bread that’s sitting in the fridge, some spinach and cheese that’s all you need!

Ingredients

4 cups of baby spinach

1 cup of grated Monterey Jack cheese

4 slices of white bread

1 egg


Instructions

Preheat oven to 400.

In a pan, cook the spinach with some olive oil, and season with salt and pepper.

Put spinach into a bowl and add in cheese.

Cut the crust off white bread slices, and flatten with a rolling pin until the slices are thin. Cut the slices in half so you have 2 triangles.

Put 1/2 a tbsp of the spinach mixture in the middle of each bread triangle. Fold triangles in half and seal by covering both sides with egg wash and sealing it with a fork.

Sprinkle some kosher salt on top of the pockets and bake at 400 for 15 mins.

Enjoy with some ranch!
